Review: Coconut Chicken & Zucchini Fries

Talk about a happy meal! P LOVED her chicken nuggets and fries with, count them, TWO dipping sauces.



I used this recipe from Our Best Bites for the Crispy Coconut Chicken Fingers. The only thing I changed, and this was only by accident, was that I used Italian flavored Panko crumbs instead of plain. I think this made them even more flavorful but probably took away from the coconut. Oh, and all I had were breasts, so I just cut them into strips. Way cheaper to just buy the tenders. I served them up with mango chutney.

 

The Baked Zucchini Fries recipe also came from Our Best Bites. I followed this recipe exactly. The issue I had with these is that the breading wouldn't stick that well to the zucchini. But they were still delicious. I sliced them super thin so they'd get crunchy, and served them with plain ol' ketchup.


This is not the fastest thing to make due to the dipping, but if you have older kids, it'd be fun to let them help. All three of us enjoyed this fast food alternative night.
