Review: Vegan Spinach Artichoke Dip

Whoa! You remember how much I raved about Creamy Avocado Pasta? Several of you tried it and loved it, right? Okay, so trust me when I say that this vegan version of spinach artichoke dip is just as fantastic! (I want it right now, actually.)


I have to say that as lovely as her photos normally are, for some reason, this one does not do this recipe justice. I tried to take a couple myself, but they were even worse.

Spinach artichoke dip is one of my most favorite things in the world. I get to eat all that cheesy goodness and pretend to feel good about my choice because there's spinach in there. So when I first saw this vegan version (read: no cheese) I was highly spectacle. But because all of the recipes I've tried from Oh She Glows thus far were great, I decided to give this one a whirl.

So what gives substance and creaminess to this dip? Navy beans & water! What keeps it tasting savory and sort of cheesy? Those nutritional yeast flakes I mentioned last week. I finally got a chance to try them out, and while I would never snack on them plain, they did cheese up this recipe.

Changes I Made:

  • Added a quarter cup parmesan cheese to the bean mixture and sprinkled a little more on top before baking.
  • Put the spinach artichoke onion mixture in the food processor for a couple of pulses b/c I didn't chop them up small enough, IMO.
  • Served with Fritos and tortilla chips. Both were equally satisfying.

I seriously want to eat this again like right now. To make this recipe even great is the fact that my 2 year old tore it up! She loves beans, and there is no mistaking that there are beans in the recipe. She didn't even notice the spinach or artichoke because I processed them so small. Score one for Mommy!
